Have you noticed that in so many cuisines there is a raw onion & vinegar dip or sauce? Allow me tell you why :) Firstly, onions soaked in vinegar is one of the most prominent immunity boosting remedy especially during change of season. Secondly, acid and onions have been used for ages to cure food and tenderize protein sources like seafood & red meat. Thirdly, it also cuts through the heaviness of fatty/oily food, hence it brightens a dish up with a healing effect on dampness according to Chinese Medicine as it helps with promoting circulation and drying out the dampness. Instructions

Step 1
Wash & peel your shallot - if you want ideas of how to use onions peel let me know, reducing waste one onion at a time :) Dice and place in bowl.
Step 2
Salt the shallot and then cover with the vinegar.
Step 3
Chop the rest of the ingredients. And mix in with the shallots.
Step 4
At the end drizzle the olive oil to cut on the acidity of the chimichurri, and to preserve the vibrancy of the greens.
