Step 1
Thinly slice scallions, reserving dark green tops for garnish. Cut 1-1/2" piece of fresh peeled ginger into thin matchsticks. Chop the garlic. Slice mushrooms.
Step 2
Heat oil in Dutch oven. Add mushrooms, ginger, garlic and scallions. Cook about 5min until fragrant and softening, stirring often.
Step 3
Add broth, soy sauce and vinegar to the vegetable mixture. Bring to a boil over medium high heat. Reduce heat and simmer 5min undisturbed. Clean the boy choy and slice or cut in 1/2 as desired for serving. Add the frozen dumplings and the bok choy to the soup and simmer 2-3 minutes until the dumplings float and the bok choy is tender. Remove from heat and stir in chili crisp.
