Perfect meal for anyone with a diabetic lived one, someone that has had bariatric surgery and needs a filling tasty meal that allows them to reach their protein goals. Definitely use chicken that is already thinned and trimmed. I used a spinach arugula mix due to availability and grape tomatoes. It was great and my picky teen loved it! Plus the potatoes and beans were done at the same time. :-) PERFECT!
