Instructions
Step 1
To a bowl, add in your shrimp & season with olive oil, paprika, Italian seasoning, oregano, garlic powder, chilli flakes & salt. Mix around until all shrimp are coated evenly.
Step 2
To a pan, add 1 tbsp olive oil on medium-high heat. Add in your shrimp & lay them all flat. Cook them for about 1-2 min on each side or until fully cooked. Remove from heat. Cook the rice in a separate pot, according to package instructions.
Step 3
In a small bowl, mix the tomato, red onion, minced garlic, olive oil, lime juice & salt & pepper.
Step 4
Assemble your bowl with the rice, shrimp (& its juices), a diced avocado & the tomato mixture.
