Instructions

Egg salad

Step 1
Boil the eggs for 10min.
Step 2
Chop the eggs, parsley and scallion.
Step 3
To a bowl add all the ingredients and mix until well combined.

Shrimps

Step 4
Heat the oil in the pan. Leave the heat on medium high. Add the shrimps and fry for about 1 minute.

Cut the cherry tomatoes in half.
Step 6
Season with salt, pepper and chilli flakes. Add the tomatoes. Fry for another 1,5-2 minutes.

Sandwich

Step 7
Cut the bread in half. Spread both sides with butter. Toast until golden brown.
Step 8
Spread the bottom half with the egg salad.
Step 9
Then top with the shrimps and tomatoes.
Step 10
Drizzle on the sriracha mayo.
Step 11
Stack the other bread half on top and enjoy!
