Instructions
Step 1
1. Cut eggplants in half & boil in water for 30-45 minutes or until soft
Step 2
2. Place softened eggplants in a strainer for an hour or two to cool & drain before dicing into very small pieces (as small as you can, will kinda look like mush)

3. Let liquid come out & tip it out
Step 4
4. Season with salt & pepper, add parmesan, breadcrumbs, eggs & parsley and mix well to combine
Step 5
5. Mixture should hold its shape so add more breadcrumbs if needed
Step 6
6. Shape into little pattie’s & fry for 5-7 minutes (or until golden) either side
