Assembly
Instructions
Step 1
Boil beef shanks in water for 1-2 minutes.
Step 2
Toast spices and place in a cheesecloth sachet or spice bag.
Step 3
In a pot, saute beef shanks with scallions, ginger, garlic, broad bean paste, and fermented black beans.
Step 4
Deglaze with rice wine.
Step 5
Add soy sauces and rock sugar. Cook until sugar is dissolved.
Step 6
Add beef stock, tomatoes, carrot, onion, rock sugar, and persimmon.
Step 7
Cook for about 1.5-2 hrs until beef is tender, but not falling apart.
Step 8
Boil noodles.
Step 9
Place sesame oil, black vinegar, and white pepper in a bowl. Ladle hot broth into the bowl and place noodles afterwards.
Step 10
Garnish with scallions, cilantro, and pickled mustard greens.
