Chahan - Japanese Fried Rice

In Japan, the word for fried rice, "chao fan," was transformed into "chahan" from its Chinese origin. This alteration in terminology can be attributed to the arrival of Chinese immigrants in Japan during the 19th century who introduced the dish. Chuuka or Japanese-style Chinese restaurants frequently list it on their menus. Tokyo residents predominantly employ the term chahan to refer to fried rice.

Instructions
Step 1
Make one cup of long grain rice according to package. We use Thai Hom Mali. Which is Jasmine Rice.
Step 2
Take the rice and put it into the freezer when your done cooking it.
Step 3
Get your eggs and beat them until bright yellow. Add a tablespoon of soy sauce and a tablespoon of sesame oil.
Step 4
Heat up a Wok or a griddle on to high heat.
Step 5
Put 2 tablespoons of canola oil and 2 tablespoons of sesame oil on your Wok or griddle.
Step 6
Wait 10 to 15 seconds for oil to heat up on Wok. Griddle will vary*.
Step 7
Pour the eggs into the oil. Let them fry up into a pancake shape.. Once it starts to become more cooked you can flip and then chop it up. Your basically making a fried omelet.
Step 8
Grab your cold rice and add it to the egg.
Step 9
Add 1 tablespoon soy sauce, 1 tablespoon sugar, 1 tablespoon Mirin or white wine to the rice and egg.
Step 10
Fry the rice for 5 minutes and keep that rice moving! You can add some sesame seeds here as well.
