Instructions

Step 1
Heat olive oil in a large skillet over medium heat. Add tofu and cook until golden brown on all sides.

In a small bowl, whisk together soy sauce, sriracha, sesame oil, ginger powder, and garlic powder.

Pour sauce over tofu and cook for 2 minutes, stirring frequently.

Meanwhile, cook rice noodles according to package instructions. Drain and set aside.

In the same skillet, stir-fry broccoli, carrots, and bell pepper for 3-4 minutes, until softened.
Step 6
Add cooked noodles, tofu, and peanut sauce to the skillet and toss to combine.
Step 7
Garnish with green onion and serve with lime wedges.
