Instructions
Step 1

Put icing sugar, flour, butter, egg and salt into mixing bowl with paddle attachment. Mix until just combined.
Step 2

Divide dough into two. Add cocoa to one half and ground pistachios to the other (Add green food coloring to the pistachio portion if you want). Knead both portions.
Step 3

Divide the cocoa dough into 2 portions and wrap in clingfilm. Roll out the pistachio dough into a 2cm thick cylinder. Then chill both doughs for 1 hr min.
Step 4

Roll out the cocoa dough into a rectangle. Brush with some water and the wrap around the pistachio dough. Wrap in clingfilm and chill for another 2 hrs min.
Step 5

Slice 1cm cookies and bake at 350f for 8-10 min. Then cool on a wire rack.
Step 6

Melt dark chocolate and dip cookies in. then decorate! (Original used freeze dried raspberries and pistachios)
