Simple "refried" beans

I learned parts of this recipe long ago and have continued to perfect it over the years. You will never go back to canned refried beans again. I make a 2lbs batch every few months and freeze in small batches for easy weeknight meals. There is no actual refrying at the end in a fat source.

Instructions

Instapot instructions

Step 1
Rough chop vegetables, remove seeds from Jalapeno if you dont want the spice.
Step 2
Add all other ingredients except mayonnaise, make sure there is enough liquid to be about 1 inch below the top of the instapot or crockpot. If you can find a ham hawk you can use 1/2 lbs of good ham (not lunchmeat). Alternatively you can use a portion of salt pork.
Step 3
Use Soup/broth function and pressure for 2 hours. Once shut off let sit for about 30 minutes to cool and de-pressurize
Step 4
Remove about 1.5 cups of liquid and remove ham hawk bones.
Step 5
Add mayonnaise and use and immersion blender or put ingredients in blender and blend until smooth. If beans are too dry add some of the reserved liquid. If beans are too wet turn on saute feature and cook off some liquid

Crockpot instructions

Step 6
All the same steps above, but cook in the crockpot about 12 hours
