Instructions
Step 1
Preheat oven to 425
Step 2
Heat olive oil in an oven safe skillet
Add onion and beef cook until browned, 5-7 min
Step 3
Add bell pepper, garlic, oregano, cumin, allspice and cayenne and season with salt and pepper
Cook until bell peppers are soft, 5 min
Push to one side of the skillet
Step 4
Add rice to the open side of the skillet, until the rice is toasted and golden
Add tomato paste and stir to combine for an additional minute Add 2 cups of water and the bay leaf
Bring to a boil then reduce heat to a simmer
Cover and cook until most of liquid is absorbed, about 15 min
Step 5
Remove skillet from heat
Discord bay leaf
Stir in beans, lime zest, and juice
Step 6
Sprinkle cheese over top, bake until cheese is lightly browned, about 10 min
Step 7
Top with avocado and serve with a lime wedge
