Potato Gnocchi

Instructions
Potato Gnocchi
Step 1
Peel skin off potatoes whiles till hot, then mash, lightly!
Step 2
Add egg, salt and pepper into mashed potatoes, then start adding flour a little at a time.
Step 3
Stir until mixture starts to come together, add water if too dry/add more flour if necessary.
Step 4
Knead with hands until lump free. DO NOT OVER WORK!
Step 5
Flatten into rectangle, about 3" thick, wrap in plastic, then let rest for a few minutes.
Step 6
When ready cut into 4 pieces, roll pieces into ropes about the thickness of your thumb.
Step 7
Cut each rope into 1" pieces, for ridges roll cut side on gnocchi board or a fork.
Step 8
Repeat until all are made, place on a floured, paper lined pan until ready to cook.
Ricotta Gnocchi

In a large bowl combine ricotta, grated cheese, egg, and salt and pepper.
Step 10
Add 3/4 of the flour and mix with a wooden spoon until mixture starts to come together.
Step 11
Add remaining flour if necessary/add water if dry, then knead with hands until lump free.

Follow procedure from above.
Pesto
Step 13
In a mortar and pestle, combine herbs, greens, garlic, nuts, and pepper - grind to a paste.
Step 14
Work in batches, if necessary, transfer paste to a larger stainless-steel bowl.
Step 15
Then mix in grated parmesan and olive oil, set aside.
Step 16
When ready, toss hot cooked gnocchi with pesto and warmed cream.
Cooking Gnocchi

Carefully place gnocchi into boiling salted water, stir gently, do not over-load pot.
Step 18
Work in batches, bring water back to boil between each batch.
Step 19
Cook for about 3 minutes, remove from pot with slotted spoon or skimmer. When cooked, gnocchi will rise to the top.
Step 20
Cook potato and ricotta in separate batches.
Step 21
Toss warm gnocchi with pesto and cream, top with shaved cheese.
