Step 1
Begin with melting the butter over a medium heat and add the flour. Stir for 2-3 minutes to cook out the flour.
Step 2
Then slowly starting adding the milk, bit by bit until it becomes a thick sauce. Keep adding and stirring until you have a creamy consistency.
Step 3
Season with salt and pepper and add the nutmeg.
Step 4
Cut two thick slices of bread and toast in a pan with melted butter.
Step 5
Grate the cheese.
Step 6
To build the sandwich, spread the béchamel evenly on the bottom slice. Top with grated cheese, then add the ham and sprinkle over more cheese. For the top slice, spread over a generous amount of dijon. Then finally add more béchamel and gruyere.
Step 7
Place in a pre heated oven at 180c/350f for roughly 8 minutes. Then switch to the grill and let the cheese bubble away until golden brown.
Step 8
Leave to cool for a minute, then slice and enjoy!
