Step 1
Heat a drizzle of olive oil in a large pan (or a few tbsp of water), add onion, and cook for about 5 minutes until onions start to go translucent.
Step 2
Add minced garlic, tomatoes, and tomato paste and sauté for 1-2 minutes until fragrant. Add rice and toss to coat.
Step 3
Add in stock and cover. Simmer for 15-20 minutes, stirring regularly, and cook until the rice is just about cooked. If needed, and a little more stock. Add in the cream and season with salt, pepper, and paprika. Mix to combine. When ready, reduce heat to low, top with mozzarella cheese and cover until the cheese is melted. Mix through, and serve with fresh basil leaves.
