2 blocksextra-firm tofu
or a plant-based chicken alternative, pressed and cut into chunks
1 cuppitted green olives
halved
1 cuppitted prunes
chopped
½ cupcapers
with a bit of their juice
4garlic cloves
minced
1 cupvegetable broth
½ cupapple cider vinegar
¼ cuppure

1 tablespoondried oregano
1 teaspoonground black pepper
½ teaspooncrushed red pepper flakes

Instructions
Step 1
Marinate the Tofu/Plant-Based Chicken: In a large bowl, combine the tofu or plant-based chicken chunks with garlic, olives, prunes, capers and their juice, oregano, black pepper, red pepper flakes, and bay leaves. Pour in the vegetable broth and apple cider vinegar, then add the pureed dates. Mix well to combine. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

2. Preheat and Bake: Preheat your oven to 350°F (175°C). Transfer the marinated mixture to a baking dish. Make sure the tofu or plant-based chicken pieces are spread out evenly. Bake in the preheated oven for 40-45 minutes, or until the mixture is bubbly and the tofu is nicely browned.

3. Garnish and Serve: Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley and lemon zest before serving.
