Instructions
Step 1
In an oven proof dish, add the boursin garlic and herb cheese, chopped cherry tomatoes along with 1 tsp salt, black pepper, red chilli flakes and lots of olive oil to coat the tomatoes and cheese. Mix the spices together
Step 2
Marinate chicken breast in some olive oil, 1 tsp salt, black pepper, red chilli flakes, garlic powder and mixed herbs. Place on a baking tray and top with handful of breadcrumbs
Step 3
Place the sauce and chicken trays in oven at 200 °C for 25mins. Flip the chicken half way and coat the other side in breadcrumbs too
Step 4
While that cooks, boil pasta as per instructions on packet
Step 5
Take the sauce out if oven and use a fork to mash up the roasted tomatoes and form a paste with cheese
Step 6
Add spinach, boiled pasta and 1 tsp mixed herbs. Spinach will wilt due to the hot sauce and pasta
Step 7
Serve pasta with sliced chicken on top
