Instructions

Sugar syrup

Step 1
Add sugar to kadai and flatten them, add water levelled and start to boil
Step 2
Switch of the flame before it becomes sticky consistency

Mixture

Step 3
In a bowl add khoa, maida and cardamom powder and mix it in till you get a sandy texture
Step 4
Make well in centre, add baking soda, 1 tspn oil and dissolve in cold water
Step 5
Knead softly, roll into a cylinder and divide into equal portions
Step 6
Roll between your palms very smooth and repeat the process for all the balls
Step 7
The oil should be hot enough if you sprinkle water over you hear a soft crackling noise
Step 8
Add the khoa and keep rolling the oil, and increase the flame a little once the balls starts to raise up
Step 9
Reduce the flame and continue cooking until you get a golden brown and increase flame a little to get the desired colour
Step 10
Fry and remove from oil and drop it into syrup and leave to soak for 15-20 minutes ready
