Instructions
Step 1
In a bowl, combine the 2 1/4 teaspoon of active dry yeast, 1 teaspoon of sugar, and 1/2 a cup of water (warm almost hot) and mix untill all yeast is submerged let sit for 10-20 minutes.
Step 2
In the meantime, mix 3 1/2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of baking powder in a large bowl.
Step 3
Whisk together the yeast mixture with; 1/2 a cup of yogurt, and 3/4 a cup of room temperature whole milk, and stir into the dry ingredient bowl.
Step 4
Knead with your hands until the dough forms a smooth, soft ball, about 2 minutes add flour if "kneaded" kekeke.
Step 5
Place the dough in an oiled bowl and cover with plastic wrap, leave at room temperature until doubled in size, about 2 hours.
Step 6
Remove the dough from the bowl and turn onto a well-floured surface, knead it briefly and divide the dough into 3 inch thick balls and roll it until its 1/4 a inch thick and distribute the 3 tablespoons of minced garlic into each dough piece and fold dough twice and re-roll into 1/4 inch thick.
Step 7
Heat a cast-iron skillet over moderately high heat and place the two sticks of unsalted butter into a bowl and melt it and set to the side with a brush. Brush the dough with melted butter and place in skillet.
Step 8
Cook for about 30-40 seconds or until golden and a little bubbly, until the dough puffs up; Flip, brush with butter, sprinkle salt on top, and cook for 30-40 more seconds. Remove from the pan and brush with butter and sprinkle with salt the other side.
