Instructions

Step 1
Slice butternut in half and remove the seeds then score the top and place into a lined baking dish

Step 2
Score the top of the butternut then add in chopped onions garlic and fresh rosemary . Drizzle all over with olive oil and sprinkle salt pepper and chili flakes ( adjust chili flakes to your liking )

Step 3
Roast in the oven at 200 c 400 f for 30-35 minutes then scoop out the flesh and add to a blender with 6 cups of a good quality veggie broth. Blend until smooth . I serve mine with extra chili flakes vegan sour cream and toasted croutons .
