Teriyaki (bitE) is a Japanese cooking technique in which foods are broiled or grilled with a glaze of soy sauce, mirin, and sugar. These days, in countries outside of Japan, any dish that uses a teriyaki-like sauce is described using the word teriyaki. In this dish, the sauce covers thick and chewy udon noodles, "mock" chicken, and veggies. It's the perfect quick and easy weeknight dinner.

0.5 Tbspvegetable oil

2 stalksgreen onion
sliced, white and green parts divided

1clove garlic
minced

160gchicken pieces
mock, torn into shreds

128ggreen cabbage
shredded

2gsalt

400gudon noodles
pre-cooked

138gcarrot
grated

80gshiitake mushrooms
sliced

¼ cupteriyaki sauce

2 Tbspsriracha hot sauce

1 tsptoasted sesame oil
Instructions
Step 1
Heat a sauté pan over medium-high heat. Add the oil, the white part of the green onion, garlic, mock chicken, cabbage, and salt. Cook for 5 minutes.
Step 2
Meanwhile, cook the udon noodles according to the package instructions. Drain and set aside.
Step 3
Add the remaining ingredients to the pan, including the drained cooked noodles. Cook for another 3 - 5 minutes, or until the veggies are cooked to your liking.
Step 4
Add your desired toppings and enjoy!
