Kale, Potato, and Sausage Soup

Step 1
Place the sausage in a large stock pot over merlium heat. As it cooks, break th sausage into crumbles. When the sausage reaches 165 degrees, add in the onion and garlic and cook for 5 minutes.
Step 2
Add the flour and stir to incorporate. Pour in the chicken broth, turn the heat to high and bring the mixture to a boil. Add the potatoes, reduce the heat to medium and cook for 10-15 minutes, or until the potatoes are tender. Add the cream and chopped kale, and cook until the kale is tender. Season to taste with salt and pepper. Add the Parmesan cheese and stir to incorporate.
