Preheat oven to 300 degrees.
Bring approximately three cups of water to a boil on the stove. Once boiling, pour it into a 9x13 pan and place the pan in the oven (on the rack below the egg bites) to create steam for creamier, more evenly cooked egg bites. Blend all ingredients, other than the spinach, in a blender or food processor, until smooth. Pour mixture into greased muffin tin until they are 3/4 full. Add some spinach on top of each one and press down into the mixture so it isn't sitting on the surface. Bake at 300 degrees for 30 minutes or until egg bites start to pull away from the sides of the pan.
