Instructions
Step 1
Place egg in a pot of water and bring to the boil. Let egg boil in water for 8-10 minutes. Remove and place in cold water immediately. Once cooled, remove from water, peel and slice.
Step 2
Preheat oven to 200°C. Cut half the wrap into triangles. Spray both sides of the wrap with oil. Place in a single layer onto a baking tray. Bake for 5-6 minutes until light golden. Set aside to cool. Alternatively, you can toast the wrap in a sandwich press.
Step 3
For the salsa, combine tomato, cucumber and basil leaves together. Season and refrigerate until ready to serve.
Step 4
Arrange toasted wrap pieces onto a serving plate. Top with spinach. Dollop over the ricotta then top with smoked salmon and sliced egg. Spoon over the salsa. Serve.
