Instructions
Step 1
Preheat oven to 350°F and line baking tray with parchment paper. Slice each explanation in half lengthwise and cut through the flesh into a diamond cross-hatch pattern, going about an inch deep. Arrange eggplant halves on baking sheet, drizzle with oil and sprinkle with seasoning. Place in the oven for 20-25 minutes.
Step 2
Take eggplants out of the oven. Make indentations in each eggplant with a fork. Top with tomato sauce, cherry tomatoes, and cheese. Place in oven for additional 10-15 minutes or until cheese has melted and tops are golden brown.
Step 3
Serve warm, garnished with fresh parsley.
