Instructions

Step 1
Pre-heat oven to 400ºF
Step 2
Cut squash lengthwise and scoop out seeds. (To make squash easier to cut, cook in microwave for 5-6 mins.)
Step 3
Rub olive oil all over inside of squash, then season with salt & pepper.
Step 4
Place squash halves in cooking dish with 1/4-1/2 water in bottom (some say to cook inside down, however it cooks fine facing up). Place in oven and cook for 20 minutes (cook time may vary depending on size of squash)
Step 5
While squash cooks, add garlic to a skillet and heat. Add ground turkey and Italian seasoning and brown meat (breaking into small chunks until no longer pink).
Step 6
Drain turkey, then add marinara sauce to turkey. (I use Newman's Sockarooni or make my own, but use your own favorite). After warmed thru, keep warm while squash finishes cooking.
Step 7
Once squash is done (fork presses in easy, but not super easy), take out of oven and scrape out inside of squash by going against the grain to pull up strands. Squash will be VERY hot use means to protect yourself. Save any extra for future recipes (freezes well).
Step 8
Top spaghetti with sauce, parmesean cheese. Enjoy
