Instructions

DRIED SHRIMP

Step 1
1. Soak the DRIED shrimp in hot water for at least 30 mins

2. After 30 mins, remove shrimp BUT SAVE THE LIQUID for the soup

3. Add the soaked shrimp into a food processor and blend until the it’s chopped into small pieces

4. After processing the shrimp, add it to all the ingredients listed under MEAT PASTE

MEAT PASTE

Step 5
1. Process the REAL shrimp into a paste in a food processor (can leave it a little chunky for texture) and add it to a large mixing bowl with the chopped soaked shrimp

2. Add the can of crab in spices, canned crab meat, ground pork, and egg to the mixing bowl

3. Mix the ingredients together until well combined and store in the fridge

SAUTÉED TOMATOES

1. Sauté the tomatoes while the soup base is heating up (see below)

2. Heat up 2 tbsp of oil

3. Once the oil is hot, sauté the garlic until fragrant

4. Then add diced onions and sauté until slightly translucent

5. Then add tomatoes and cook for 1-3 minutes. Not too long, tomatoes should still hold shape

6. Add the fish sauce and mix well

7. Set this aside

SOUP BASE

1. Add the 5 cups of hot shrimp water and 8 cups of chicken stock into a pot and bring to a boil

2. While waiting for soup base to boil, sauté the tomatoes (see above)

3. Once the soup is boiled, turn down the heat to a simmer and add the salt, tamarind soup base, shrimp sauce, crab paste, and bean oil for color. Stir until dissolved

4. Once dissolved add the sauteed tomatoes, onion, and garlic

5. Bring the soup to a simmer/slow boil

6. Once simmering/slow boil add the tofu and MEAT PASTE

7. When adding the MEAT PASTE, add 1 large spoonful at a time (use 2 spoons – use 1 spoon to scoop up the meat paste and the other spoon to scoop off the meat paste into the soup). Be careful not to break the meatball while adding to the soup

8. Cook the soup until the meatballs float to the top

9. Your broth is now done

10. While waiting for your soup/meat paste to cook, cook your bun noodles and wash and prep your veggies

11. Assemble your bowl with bun noodles and add soup

12. Add veggie toppings
