QUINOA TABBOULEH WITH MINT VINAIGRETTE✨ I get asked often where the inspiration for my recipes comes from and one source of inspiration is my mother-in-law! She’s an exceptional home cook and, apart from loving Kyle, the thing we connect the most on is our deep love for food and cooking. You guys are going to love her mint vinaigrette on this quinoa tabbouleh!🌿 Ingredients: 1 cup quinoa 2 cup water 1/2 tsp salt 2 Roma tomatoes, chopped 3 small cucumbers, chopped 2 scallions, thinly sliced 1 cup fresh parsley, finely chopped Mint Vinaigrette: 1/2 cup olive oil 1/4 up. fresh squeezed lemon juice + zest 1 tbsp red wine vinegar 1 clove garlic 1 small shallot, finely minced 1/2 cup fresh mint, chopped 1/4 cup fresh parsley, chopped pinch of red pepper flakes salt and pepper to taste Directions: Add your quinoa and water to a small pot, season with salt, and bring to a boil Reduce to a simmer and cover and cook for 15 minutes until the quinoa has absorbed most of the moisture Remove from heat and let stand, covered, for 5 minutes then fluff with a fork While the quinoa is cooking, chop up your veggies and make your vinaigrette You can either pulse your vinaigrette ingredients in a food processor or stir them together in a small dish or glass Assembled your tabbouleh by adding all of your ingredients to a medium-sized mixing bowl and tossing with your mint vinaigrette Taste and season with additional salt and pepper as needed Serve and ENJOY! Instructions

Step 1
Add your quinoa and water to a small pot, season with salt, and bring to a boil

Reduce to a simmer and cover and cook for 15 minutes until the quinoa has absorbed most of the moisture
