Instructions

Step 1
Clean the goat trotters thoroughly and remove any excess fat or hair. Wash them well under running water.
Step 2
Heat oil or ghee in a separate pan and Add the onions and sauté until they turn slightly brown.
Step 3
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Step 4
Add whole & ground spices and cook for couple of minutes until fragrant.
Step 5
Add the yogurt and cook until the oil separates from the masala.
Step 6
Add the trotters and fry the paya with the spices on high heat for 5 minute. Pour enough water to cover them and cook for about 3-4 hours or until the trotters are tender and cooked.
Step 7
Once done check the consistency of gravy if needed let it simmer for about 30-40 minutes to allow the flavors to meld together and until desired consistency.
Step 8
Garnish with fresh coriander leaves and ginger.
Step 9
Serve hot with naan, roti, or rice. Squeeze some lemon juice on top before eating for an extra tangy flavor.
