Ingredients

1 cupquinoa
cooked, or couscous
½ cupcanned white beans
drained and rinsed
½ cupgreen beans
steamed
½ cupcherry tomatoes
sliced
¼ cupsliced black olives
¼ cupcrumbled goat cheese
1 Tbspfresh basil
chopped
lemon wedges
for serving
dijon vinaigrette
¼ cupolive oil
2 Tbspred wine vinegar
1 Tbspdijon mustard
1clove garlic
minced
salt
to taste
pepper
to taste

Instructions
Step 1
Cook the quinoa according to package instructions and let it cool.
Step 2
In a large mixing bowl, add cooked quinoa, white beans, steamed green beans, sliced cherry tomatoes, and sliced black olives.
Step 3
In a small mixing bowl, whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and pepper until well combined.
Step 4
Drizzle the dijon vinaigrette over the bowl and toss everything together until well combined.
Step 5
Sprinkle crumbled goat cheese and chopped fresh basil over the top and serve with lemon wedges.
