Instructions

Step 1
Heat a large skillet or dutch oven over medium heat and add the olive oil.
Step 2
Let it warm up for a minute or two, then add the chopped onions and stir. Cook for about 3 minutes, until fragrant, and add the ground beef and garlic. Cook for 6-8 minutes, breaking up the beef with a wooden spoon as it cooks until the beef is fully cooked. Drain if needed, then add the green bell pepper.
Step 3
Add the marinara (see notes for subs), brown sugar, mustard, Worcestershire sauce, chili powder, paprika, garlic powder, onion powder, hot sauce (if using), salt, and pepper. Mix well. Let the mixture get bubbly and simmer for 15 minutes.
Step 4
While the mixture simmers, make the coleslaw. In a medium bowl or large lidded container, combine the coleslaw mix, mayo or olive oil, apple cider vinegar, honey, salt, pepper, and garlic. Mix well until the slaw is evenly coated in sauce. Set aside.
Step 5
Let the meat cool fully before storing. Store the meat, coleslaw, and buns in separate containers. Reheat the filling and assemble when you are ready to eat. You can eat the coleslaw on the sloppy joes or enjoy it on the side.
