Step 1
Thinly chop the garlic and spring onions and place in a bowl. Cut the courgettes in half lengthwise and score the inside of the flesh with a sharp knife without cutting the skin. Scoop out the flesh and cut it into small cubes then add to the garlic, onions and a pinch of salt. Heat the olive oil in a large pan on a medium heat and shallow fry the courgette, onions and garlic for 5 minutes until the courgette has fully softened. Add in the passata and leave on a low heat for a further 5 minutes. Spoon the sauce equally into the four hollowed courgette boats and then top with sliced up basil leaves and mozzarella. Sprinkle a pinch of salt and pepper over each boat. Place on a baking tray and cook in a preheated oven at 180°C for around 15 minutes, until the cheese has browned. Suggested servings: Two.
