Crustless Spinach & Tomato Cheese Quiche

Instructions

Step 1
Preheat oven 350F and grease a 9" pie plate.
Step 2
In a saucepan, saute butter and onions. Once softened add spinach and cook until slightly wilted. Remove from heat and set aside.
Step 3
In a separate bowl, combine eggs with cream. Add 2 TBS of Parmesan cheese, basil, salt and pepper. Once blended add spinach mixture. Pour into a prepared pie dish.
Step 4
In a small bowl, combine ricotta and mozzarella cheese plus 2 TBS Parmesan cheese. Spoon drop on top of spinach then add sliced cherry tomatoes and remaining Parmesan cheese.
Step 5
Bake 1 hour until set and golden brown on top.
