Step 1
Preheat the oven to 160C.
Step 2
Fry the onion, pepper and tomato until soft.
Step 3
Add the spinach and cook for another few minutes.
Step 4
Remove from the heat and add the sundried tomatoes.
Step 5
Break the eggs into a bowl. Add the milk, paprika, salt and pepper and mix well.
Step 6
Lightly oil a muffin tin, and divide the vegetables evenly between 12 cups. Fill them with the egg mix and top with grated cheese.
Step 7
Bake for 20 minutes, or until the omelettes are cooked through and slightly browned on the top.
