Instructions
Step 1
1. Remove the pit from the tomatoes and remove the stem and seeds from the chiles.
Step 2
2. Chop 3 tbsp onions and 4-5 slices for garnish. Put the side.
Step 3
3. Add chiles, onion, tomatoes, and garlic. Boil for 8-10 minutes or until the chiles are smooth and the tomatoes have blistered.
Step 4
4. Blend 1/2 cup of the cooking water, cumin, oregano, seasonings to taste, chiles, tomatoes, onion, and garlic for 2 minutes or until well combined.

5. Cut the tortillas into triangles.
Step 6
6. Lightly coat with oil spray and air fry for 350° F for 3-4 minutes, shake, and air fry for 3-4 additional minutes.
Step 7
7. Add oil spray to a pan and cook 3 tbsp of chopped onion for 2 minutes.
Step 8
8. Bring the heat down to low and cook for 5 minutes. Add 3/4 cup of strained salsa to the pan. The sauce should get darker in color and thicken.
Step 9
9. Mix in the tortilla chips and top with 28 grams of cheese.
Step 10
10. While the cheese melts, mix 1/2 cup egg whites, 1 egg, seasonings to taste to make scrambled eggs.
Step 11
11. Serve the eggs with the chilaquiles. Top with 30 g Greek yogurt, onion slices, and cilantro.
