Minced Mushroom Tortillas

Instructions

Step 1
1️⃣ Firstly, roughly chop the mushrooms and pulse in a blender, then transfer to a large mixing bowl
Step 2
2️⃣ Now roughly chop the onion and pulse in the blender, then add to the mushrooms
Step 3
3️⃣ Add the taco seasoning + 1 tbsp olive oil + pinch salt + pepper to the mixing bowl and stir to combine
Step 4
4️⃣ Spread the mixture onto a lined baking tray and bake in the oven for 35 minutes at 200C
Step 5
5️⃣ Meanwhile, roughly chop the tomatoes and add to separate bowl + pinch of salt and leave to rest
Step 6
6️⃣ Just before the minced mushrooms have finished baking, warm the tortilla wraps
Step 7
7️⃣ Finally, add the mushroom mince + chopped tomatoes + chopped parsley/coriander into the tortillas and tuck in
