Garlic Prawns and Mushroom Pasta

Instructions

Step 1
Finely slice the garlic cloves and mushrooms and set aside.
Step 2
Add the spaghetti to boiling salted water and cook as per instructions.
Step 3
Add the olive oil and butter to a sauté pan or skillet and place on a low heat.
Step 4
Once the butter has melted add in the finely sliced garlic stir to ensure all the garlic is covered and cook until you can smell the garlic in the oil around 6 minutes.
Step 5
Add in the sliced mushrooms, the oils will be soaked up by the mushrooms but they will eventually release the oils in around 7-8 minutes.
Step 6
Add in 5g of chives and the chill flakes then check the spaghetti has cooked.
Step 7
The spaghetti must be cooked before adding the prawns into the pan with the garlic and mushrooms to avoid overcooking them.
Step 8
Add the prawns into the pan and stir in mixing well with the garlic and mushrooms and cook for another two minutes then add in the spaghetti and toss, coating with the mushroom, garlic and oil. Add in a ladle of the pasta water stir and add the remaining chives leaving a little for garnish.
Step 9
Plate up, add pasta prawns and mushrooms to a pasta bowl, add grated Parmesan to the top and garnish with the remaining chives, lick you’re lips and enjoy.
