Ingredients
4 servings
1eggplant
cubed
2 tablespoonsolive oil
2green curry paste
adjust amount to desired spice level
16 ouncescan of coconut milk
2bell pepper
sliced
1 blockextra-firm tofu
drained and cubed
1 cupbroccoli florets
½ cupbasil
chopped
¼ cupfresh cilantro
chopped
lime wedges
for serving
brown rice
Cooked, or noodles, for serving
Instructions
Step 1
Heat olive oil in a large skillet over medium heat. Add eggplant and cook for 5-7 minutes, until softened and lightly browned.
Step 2
Stir in green curry paste and cook for 1 minute until fragrant. Add coconut milk and bring to a simmer.
Step 3
Add bell pepper and tofu, simmer for 5 minutes. Stir in broccoli, basil, and cilantro. Simmer for 2-3 minutes until broccoli is tender-crisp.
Step 4
Serve Thai Green Curry with lime wedges and cooked brown rice or noodles.
