Instructions
Step 1
Whisk together the soy sauce, water, honey, rice vinegar, minced ginger and garlic, and sesame oil in a bowl.
Step 2
Add the chicken thighs to a large bowl with about 1/3 of the sauce and toss to coat (save the rest for later).
Step 3
Let marinate for at least 10 minutes.
Step 4
Heat 1 tbsp olive oil over medium high heat, then pan fry the chicken thighs for about 6 minutes per side.
Step 5
Remove the chicken from the pan and set aside on a plate.
Step 6
Turn down the heat and add the remaining teriyaki sauce.
Step 7
Use a whisk or wooden spoon to scrape up anything on the pan, and simmer for about 3-4 minutes until the sauce thickens.
Step 8
Add the chicken thighs back to the sauce and toss to coat.
Step 9
Serve over rice with avocado, sesame seeds, green onion, and the rest of the teriyaki sauce from the pan. Enjoy!
