Chicken satay always slaps
I’m only making 2 portions in the vid but the ingredients below will get you 4 portions
I’m not including the cost of the garlic, soy sauce and ginger as it’s such small amount. I still had plenty of each left from yesterdays shop
Full shop:€13.58
-800g chicken thighs €6.80
-470g tub peanut butter €2.85
-150g jar Thai red curry €1.49
-400ml coconut milk .95c
-1kg basmati rice €1.49
This is coming in at €2.60 per portion for the chicken, sauce and rice
Recipe:
-800g chicken thighs
-300g basmati rice (dried weight)
-120g smooth peanut butter
-140g red curry paste
-400ml coconut milk
-few dashes dark soy sauce
-2 cloves minced garlic
-tsp fresh grated ginger

Step 1
Method:
-get your peanut butter, curry paste, garlic, ginger, soy sauce and 70g of your coconut milk into a bowl and give it a good mix -take 2-3 tbsp of this mixture and place is in another bowl. Add your chicken to this bowl and mix. Leave to marinate for an hour to overnight -fry the chicken off on a medium high heat until nice and charred on all sides -for the sauce add the rest of your sauce mix and coconut milk to a pot on a medium low heat. Give it a good mix until it’s full combined -leave to simmer for 10-15 mins until it thickens -I served mine up with boiled basmati rice, roasted tenderstem broccoli and lashings of the sauce
