Step 1
Boil and mash potatoes or use left overs - about 1.5 cups Dry on a low heat back in the pan
. You can mash them with a wooden spoon as they are drying to help moisture escape quicker.. takes 2-3 minutes Mix together with egg lemon zest, salmon, salt, pepper and spring onions Using a non stick pan and a little oil, pan fry patties using one third of a cup of the mix for each Pattie To make dressing mix lemon zest, juice, yoghurt and mayonnaise together in a bowl. Serve with salad .. dressing nice on salad too

De some minor adjustments to the original recipe as I did not have capers or fresh parsley, and forgot the flour... They stayed together very well and were lovely and light. May not use as much lemon in the dressing next time, which was very lemony and tart.. with the yoghurt but nice.
