Instructions
Step 1
Preheat oven to 180 degrees celsius.
Step 2
Trim the crusts off the brioche slices and set them aside.
Step 3
In a small bowl combine the butter and brown sugar with a spatula.
Step 4
Add salt and honey, and mix.
Step 5
Spread butter mixture evenly on all faces of the bread, including the top, bottom, and sides.
Step 6
Place on a baking tray and bake for 10 minutes, then remove from the oven and gently flip each piece of bread.
Step 7
Return to the oven for 8 more minutes.
Step 8
Take the toast out of the oven and set to rest without touching for 2 minutes, before moving them onto a cooling rack. They will be very hot and soft, but they will harden as they cool.
Step 9
Let them sit on a cooling rack for 8-10 minutes.
Step 10
While cooling, mix the heavy cream, vanilla paste, and powdered sugar to a bowl. You can add more sugar if you want, but not too much that it will overpower the toast.
Step 11
Whip until stiff peaks and serve with the toast.
