Cheesy chickpeas and roasted broccoli, this was a real comfort! A combo that works so well, you definitely don’t want to miss out!
Ingredients:
1 tin of chickpeas
1 shallot
4 cloves garlic
100g cheddar style cheese, grated
1 tbsp. Nutritional yeast
1 red chilli
1 stalk of broccoli
50ml veg broth
1 red chilli
Method:
Cut the broccoli into florets, drizzle with olive oil and roast for 20 minutes at 190C.
Dice shallot and broccoli stalk. Fry the shallot in olive oil for 5 minutes and then add the broccoli stalk and minced garlic. Fry for another 5 minutes, then add the chickpeas, broth, grated cheese, nutritional yeast and another pinch of salt. Let simmer until thick and then top with the broccoli
