Loaded Taco Wedges with a Chipotle Sauce π€€

They can easily be bulked out even further with more veggies too if you need or add more cheese if you want π€€

Ingredients (serves 2):
200g lean beef mince
Taco seasoning
2 tbsp salsa
Red pepper diced
Red onion diced
Tsp garlic puree
500g potato
40g lighter mature cheddar
60g fat free yoghurt
1/2 tsp chipotle paste
1/2 tsp smoked paprika
2 tbsp lime juice
Spring onions
Coriander
πCut your potatoes into wedges and pat dry. Pop in the airfryer, season with a tbsp of taco seasoning, salt and pepper. Air fry for 30 minutes on 190 degrees shaking part way through.
π In a pan, fry off the mince beef in the garlic for a couple of minutes until nearly browned, then add in the pepper and onion.
πAdd in two tbsp of the taco seasoning, 2 tbsp salsa and 100ml water leave to simmer.
πTop the wedges with the mince and cheese. Melt for a couple of minutes under the grill (can also do in the airfryer).
π Mix together the yoghurt, chipotle paste, smoked paprika, pinch of salt and lime juice and drizzle over the wedges.
π Top with spring onions and coriander onions and coriander
