Honey roasted feta and pepper pasta salad
Another beautiful and prepable pasta salad that is a total joy to eat. Roasting the feta with oregano and honey intensifies its flavour and just gives this salad that extra bit of finesse. I like to pair with any extra protein of choice. Add extra bulk with rocket if needed.

You will need to serve 4
150g feta
1 large red pepper, sliced
1 large yellow pepper, sliced
1/2 red onion, very finely diced
250g dry weight pasta of choice
A small cupped handful of green olives, cut in 1/2
3 tbsp capers
Oregano
Handful of fresh basil, chopped
Dressing
Juice of 1 large lemon
2 tsp white wine vinegar
1 heaped tsp dijon mustard
1 heaped tsp honey
1 tsp garlic puree
Pre heat the oven to 210c fan
Cook the pasta fully to packet instructions in boiling salted water. Drain and rinse under cold water to remove excess starch. Set to one side.
Slice the peppers, in a baking place the feta in the centre and scatter the peppers around. Drizzle over olive oil, honey, a good pinch of oregano, salt and pepper. bake for 25-30 minutes until golden.
Mix together the dressing ingredients, season with a little pinch of salt.
Toss together the pasta, finely chopped onion, fresh basil, capers, olives, roasted peppers, feta and dressing. Serve on its own or with a protein of choice.
