Stuffed Sweet Potato Balls

Instructions

Step 1
Boil or steam the potatoes for about 30 minutes or until they are soft, let them cool, remove the pulp and set aside
Step 2
Grate the provola, add it to the mashed potatoes together with the cheese, salt, pepper and plenty of thyme. Flatten a little and place in the freezer for 15 minutes or in the fridge for at least 30. Meanwhile, make the mayonnaise.
Step 3
Cut into squares and form balls, dip them in flour and fry them in oil at 175 degrees a few at a time, trying not to touch them
