Instructions
Step 1
Cook the pasta shells according to the package instructions until al dente.
Step 2
Once cooked, rinse the shells in ice-cold water and pat them dry. Set them aside.
Step 3
In a mixing bowl, combine the grated mozzarella, chopped coriander, dill, salt, and pepper. Add the garlic granules and mix well.
Step 4
Take one pasta shell and fill it with approximately 3 teaspoons of the mozzarella filling. Cover it with another pasta shell, similar to the photo, ensuring that the filling is completely enclosed.
Step 5
Place the filled pasta shells on a tray lined with parchment paper and freeze them for at least 1 hour.
Step 6
In a separate bowl, combine the panko bread crumbs, garlic granules, salt, black pepper, paprika, and turmeric powder. Mix well.
Step 7
In another bowl, beat the eggs and season them with salt and black pepper.
Step 8
Dip the frozen pasta shells into the beaten eggs, then coat them evenly with the bread crumb mixture. Dip them back into the eggs and then into the bread crumbs again, ensuring they are fully covered. Return the coated shells to the freezer while you prepare the frying oil.
Step 9
Heat vegetable oil in a Cusimax deep fryer to 190°C.
Step 10
Carefully place 4 coated pasta shells into a mesh basket and deep fry them until they turn golden brown, approximately 4-5 minutes. Repeat with the rest.
Step 11
Once fried, transfer the shells to a paper towel-lined plate to remove any excess oil. Serve them hot with your favourite sauce. Enjoy!
