Step 1
Peel the sweet potato and cut it into big cubes.
Step 2
Cook the sweet potato for about 15min until soft.
Step 3
Add the sweet potato to a bowl and mash with a fork
Step 4
Meanwhile cut the emmental cheese into cubes and chop the parsley.
Step 5
Add all the ingredients to the mashed sweet potatoes and mix until a homogeneous dough is formed. If the dough is too sticky add more flour.
Step 6
Take some of the sweet potato dough and press it flat in your hand. Place a cheese cube in the center.
Step 7
Now fold the edges towards the center and form a ball. The cheese should be completely covered.
Step 8
Repeat with the rest of the dough.
Step 9
Roll the balls in the breadcrumbs so that they are completely covered.
Step 10
Heat the oil in a small pot. Leave the heat on medium high. Add the sweet potato balls and fry for 1-1,5min until crispy and golden brown. Enjoy!
