Instructions

Step 1
First make your mashed potato, you can also use one packet of ready mashed potato instead for ease. When using packet mash, add around 30g butter and a splash of cream (optional) for extra creaminess.

Next for the caramelised onions (optional step), slice 2 onions and add 2 tbsp of oil to a pan with the onion. Cook on a medium heat while stirring for a few minutes then reduce to a low heat. Continue to cook while stirring occasionally for about 20 minutes until caramelised.

Then slice two more onions and cook them in a pan with 1 tbsp oil until soft. If you are skipping the caramelised onions step, do this with all 4 onions instead of 2.

In a bowl, add your mashed potato, onions (add your desired amount depending on the amount of potato), 1 egg, a mix of cheeses (red and white cheddar, mozzarella, Red Leicester), jalapeños (some chopped, some whole), some jalapeño juice from the jar, salt and pepper. Mix together until we’ll combined. Taste and add more or less of any ingredient you feel is needed.

Then cut out puff pastry squares and add a scoop of filling. Either use another pastry square as a topping to make larger square pasties or fold in half diagonally to make triangles

Seal the edges tightly by pressing with a fork and cut slits in the centre for better baking.

In a small bowl crack one egg and whisk. Brush the pastries with this egg.

Bake in a preheated oven at 200C for 10-15 minutes until golden and crisp.
