Cheesy chicken potato spirals

Kind of like a loaded baked potato with my own twist. The whole fam loves them!

Instructions

Step 1
Place a potato between 2 chopsticks and slice thinly down the potato. The chopsticks prevent cutting entirely through.
Step 2
Place potatoes on a sprayed baking sheet and brush on butter, salt, pepper, and garlic.
Step 3
Bake at 450° for approximately 35 mins or until tender inside and crisply outside.
Step 4
Meanwhile, cut chicken breast into small diced pieces. I used scissors and just roughly cut small pieces. Place into a pan with a small amount of oil and green onions. Cook until done.
Step 5
Drain chicken and add Velveeta cheese.
Step 6
Remove potatoes from oven and top with shredded cheese (you can also use small slices if you want) just try to get most of it in the slices of potato. Add green onion on top and place back into the oven for 5-10 mins.

Plate your potatoes and top with cheesy chicken.
